Vegan Stir Fry

Ingredients:

For the Stir Fry Sauce:

  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup or agave nectar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch (optional, for thickening)

For the Stir Fry:

  • 1 tablespoon vegetable oil
  • 1 block firm tofu, pressed and cubed
  • 3 cups mixed vegetables (broccoli florets, bell peppers, carrots, snap peas, etc.)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers (assorted colors)
  • 1 cup sliced carrots
  • 1 cup snap peas, trimmed
  • Cooked brown rice or quinoa for serving
  • Sesame seeds and chopped green onions for garnish

Instructions:

 Prepare the Stir Fry Sauce:

  1. In a bowl, whisk together soy sauce, hoisin sauce, rice vinegar, maple syrup, sesame oil, and cornstarch (if using). Set aside.

 Cook the Tofu:

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add cubed tofu and cook until all sides are golden brown. Remove from the skillet and set aside.

Stir Fry Vegetables:

  1. In the same skillet, add a bit more oil if needed.
  2. Add minced garlic and grated ginger, stir-frying for about 30 seconds until fragrant.
  3. Add broccoli, bell peppers, carrots, and snap peas. Stir-fry for 5-7 minutes until the vegetables are crisp-tender.

Combine and Add Sauce:

  1. Return the cooked tofu to the skillet with the stir-fried vegetables.
  2. Pour the prepared stir fry sauce over the tofu and vegetables.
  3. Toss everything together until well coated and heated through.

Serve:

  1. Serve the vegan stir fry over cooked brown rice or quinoa.
  2. Garnish with sesame seeds and chopped green onions.

Note: Feel free to customize the vegetables based on your preferences or what’s in season.
