Introduction

Lasagna Rolls are a fun, modern twist on the classic layered lasagna we all know and love. Instead of stacking layers of pasta, cheese, and sauce, these lasagna sheets are rolled up individually with a rich ricotta filling and smothered in marinara sauce and melted cheese. The result? Neat, cheesy, portion-controlled lasagna that’s easier to serve and just as comforting.

Perfect for meal prep, family dinners, and special occasions, lasagna rolls are customizable, freezer-friendly, and guaranteed to please both kids and adults. This recipe includes tips for a vegetarian version, optional add-ins like spinach or ground beef, and a rich, satisfying flavor in every bite.

Ingredients

For the Lasagna Rolls:

  • 12 lasagna noodles (traditional or oven-ready; not no-boil type)

  • 1 tablespoon olive oil

  • 2 cups ricotta cheese (whole milk recommended)

  • 1 large egg

  • 1½ cups shredded mozzarella cheese (divided)

  • ½ cup grated Parmesan cheese

  • 2 tablespoons chopped fresh parsley or basil

  • 1 teaspoon garlic powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 2½ cups marinara sauce (store-bought or homemade)

Optional Add-ins:

  • 1 cup cooked spinach (well-drained and chopped)

  • ½ pound cooked ground beef or Italian sausage

  • ¼ teaspoon red chili flakes (for heat)

  • ½ teaspoon Italian seasoning

Preparation Instructions

Step 1: Cook the Lasagna Noodles

Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to the package instructions until al dente (usually 8–10 minutes). Stir occasionally to prevent sticking. Once cooked, drain the noodles and lay them flat on a clean kitchen towel or parchment paper to cool.

Tip: Add a splash of olive oil to the boiling water to prevent sticking, and don’t rinse the noodles.

Step 2: Prepare the Cheese Filling

In a large mixing bowl, combine the ricotta cheese, egg, 1 cup of mozzarella, Parmesan, parsley or basil, garlic powder, salt, and black pepper. Mix until smooth. If you’re adding cooked spinach, beef, or sausage, fold it into the cheese mixture now.

Make-Ahead Tip: You can prepare this filling a day ahead and refrigerate it in an airtight container.

Step 3: Assemble the Lasagna Rolls

Take one cooked lasagna noodle and lay it flat. Spoon about 2–3 tablespoons of the cheese mixture along the length of the noodle. Spread it evenly, leaving a small margin at each end. Carefully roll the noodle from one end to the other to form a spiral.

Repeat with the remaining noodles and filling.

Step 4: Layer the Baking Dish

Preheat your oven to 375°F (190°C).

Spread ½ cup of marinara sauce on the bottom of a 9×13 inch baking dish to prevent sticking. Place the lasagna rolls seam side down into the dish. Arrange them snugly in a single layer.

Pour the remaining marinara sauce evenly over the top of the rolls, making sure each one is well coated. Sprinkle the remaining mozzarella cheese on top.

Step 5: Bake the Lasagna Rolls

Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and slightly golden.

Let the lasagna rolls rest for about 5 minutes before serving. Garnish with chopped basil, extra Parmesan, or a drizzle of olive oil if desired.

Serving Suggestions

Lasagna rolls make a hearty, satisfying main dish on their own, but you can serve them with a variety of sides for a full meal:

  • Garlic Bread: A classic pairing that helps scoop up the extra sauce.

  • Green Salad: A crisp Caesar or mixed greens salad balances the richness.

  • Roasted Vegetables: Try broccoli, zucchini, or bell peppers.

  • Glass of Wine: A medium-bodied red wine like Chianti or Merlot complements the flavors well.

Tips for Perfect Lasagna Rolls

  1. Prevent Sticking: Lay noodles on a flat surface after boiling and don’t stack them.

  2. Use Fresh Ricotta: The fresher the cheese, the creamier the filling.

  3. Thicken Runny Ricotta: If your ricotta is watery, drain it in cheesecloth or a sieve before mixing.

  4. Freeze-Friendly: Assemble the rolls, wrap tightly, and freeze. Bake directly from frozen (add 10–15 minutes to bake time).

  5. Vegetarian Version: Skip the meat and add more veggies like mushrooms, spinach, or zucchini.

  6. Make It Spicy: Add red chili flakes to the filling or sauce for a kick.

Make Ahead & Storage

To Make Ahead:
Assemble the rolls a day in advance, cover tightly with foil or plastic wrap, and refrigerate. Bake as directed when ready.

To Store Leftovers:
Keep leftovers in an airtight container in the refrigerator for up to 4 days.

To Freeze:
Freeze baked or unbaked rolls individually or in batches. Wrap tightly in plastic wrap and foil. Reheat in oven or microwave until heated through.
