Air Fryer Parmesan Crusted Chicken with Mayo

Ingredients:

For the Parmesan Crusted Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • Cooking spray

For the Garlic Mayo Dip:

  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions:

Preparing the Parmesan Crusted Chicken:

  1. Preheat Air Fryer: Preheat your air fryer to 400°F (200°C).
  2. Prepare Breading Station: Set up a breading station with three shallow bowls. In the first bowl, place flour. In the second bowl, mix together beaten eggs. In the third bowl, combine grated Parmesan cheese, breadcrumbs, garlic powder, dried oregano, onion powder, and black pepper.
  3. Coat Chicken: Dredge each chicken breast in the flour, then dip into the beaten eggs, and finally coat evenly with the Parmesan breadcrumb mixture, pressing the mixture onto the chicken to adhere.
  4. Spray with Cooking Oil: Lightly spray both sides of each breaded chicken breast with cooking spray. This helps to achieve a crispy texture in the air fryer.

Air Frying:

  1. Air Fry Chicken: Place the breaded chicken breasts in a single layer in the air fryer basket, ensuring they are not overcrowded. Cook in batches if necessary.
  2. Air Fry: Cook in the preheated air fryer for 12-15 minutes or until the chicken reaches an internal temperature of 165°F (74°C), flipping halfway through for even cooking.

Making Garlic Mayo Dip:

  1. Prepare Garlic Mayo Dip: While the chicken is cooking, mix together mayonnaise, minced garlic, lemon juice, salt, and black pepper in a small bowl. Adjust seasoning to taste.

Serving:

  1. Rest and Garnish: Allow the Parmesan crusted chicken to rest for a few minutes before serving. Garnish with chopped fresh parsley if desired.
