Recipe: Meat and Potato Casserole

Ingredients:

For the Meat and Potato Mixture:

  • 1.5 lbs ground beef or ground turkey
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 cup frozen peas and carrots (or mixed vegetables)
  • 1/2 cup beef or vegetable broth
  • 2 tablespoons tomato paste

For the Potato Topping:

  • 4 large potatoes, peeled and sliced into thin rounds
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese

Instructions:

Preheat the Oven:

  1. Preheat your oven to 375°F (190°C).

 Cook the Meat and Potato Mixture:

  1. In a large skillet, cook ground beef or turkey over medium heat until browned.
  2. Add chopped onion, minced garlic, dried thyme, salt, and black pepper. Cook until the onion is softened.
  3. Stir in frozen peas and carrots, beef or vegetable broth, and tomato paste. Simmer for 5-7 minutes until the mixture thickens.

 Prepare the Potato Topping:

  1. In a bowl, mix melted butter, milk, salt, and black pepper.
  2. Arrange the sliced potatoes in a greased casserole dish.
  3. Pour the butter and milk mixture over the potatoes, ensuring they are well-coated.

 Assemble the Casserole:

  1. Spoon the meat mixture over the potatoes, spreading it evenly.
  2. Sprinkle shredded cheddar cheese over the top.

 Bake:

  1. Cover the casserole dish with aluminum foil.
  2. Bake in the preheated oven for 40-45 minutes.
  3. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown.

 Serve:

  1. Let the casserole rest for a few minutes before serving.
  2. Serve the Meat and Potato Casserole hot.
