Carnivore Meatballs Recipe

Ingredients:

  • 1 lb ground beef (80/20 or 85/15 for best flavor and fat content)
  • 1/2 lb ground pork (optional, for extra flavor and juiciness)
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese (optional for added richness)
  • 1 tsp sea salt (or to taste)
  • 1/2 tsp black pepper (optional, if allowed on your carnivore diet)
  • 1/2 tsp garlic powder (optional for a little flavor boost)
  • 1/2 tsp onion powder (optional)
  • Beef tallow, ghee, or butter (for frying)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C) if you plan to bake the meatballs instead of frying them.
  2. Mix the Meatball Ingredients:
    • In a large mixing bowl, combine the ground beef, ground pork (if using), eggs, Parmesan (if using), salt, pepper, garlic powder, and onion powder.
    • Use your hands to mix everything thoroughly but gently, so the meatballs don’t become tough.
  3. Form the Meatballs:
    • Roll the mixture into 1-2 inch meatballs. You should be able to make about 16-20 meatballs, depending on the size.
  4. Cook the Meatballs:

    Option 1: Frying (for extra flavor and texture):

    • Heat beef tallow, ghee, or butter in a large skillet over medium heat.
    • Add the meatballs in batches (don’t overcrowd the pan) and cook for 6-8 minutes, turning them occasionally to brown all sides.
    • Once browned, you can continue cooking in the skillet until fully cooked through (about 10-12 minutes total), or transfer them to a baking sheet and finish cooking in the oven for an additional 10 minutes at 375°F.

    Option 2: Baking (for convenience):

    • Place the meatballs on a parchment-lined baking sheet.
    • Bake in the preheated oven for about 20-25 minutes, or until fully cooked through and browned on the outside.
  5. Serve:
    • Serve the meatballs on their own or with a dipping sauce made from beef broth reduction or some melted butter for a true carnivore meal.
