Warm, comforting, and full of home-cooked goodness, Meatballs with Noodles is a cozy classic that brings family and flavor to the table. Tender, seasoned meatballs simmered in a savory gravy or tomato-based sauce, served over a bed of buttery egg noodles — it’s a simple combination that delivers big-time satisfaction.

This dish is perfect for busy weeknights, Sunday dinners, or meal prep. It’s easy to customize based on your taste preferences (think Swedish-style, Italian-inspired, or even spicy Asian flavors). And best of all, it’s a one-bowl meal that feeds a crowd and warms the soul.

Let’s dive into this comfort food staple and learn how to make juicy meatballs and perfectly cooked noodles with minimal fuss and maximum flavor.

Ingredients:

For the Meatballs:

  • 1 lb ground beef (or a 50/50 mix of beef and pork)

  • 1 large egg

  • ½ cup breadcrumbs (plain or Italian-style)

  • ¼ cup grated Parmesan cheese (optional)

  • ¼ cup milk

  • 2 cloves garlic, minced

  • 1 small onion, grated or finely minced

  • 1 tsp Worcestershire sauce

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp dried Italian herbs or parsley

  • 2 tbsp olive oil (for searing)

For the Sauce (Two Options):

Option 1: Savory Brown Gravy Sauce

  • 2 tbsp butter

  • 2 tbsp flour

  • 2 cups beef broth

  • 1 tbsp Worcestershire sauce

  • ½ tsp onion powder

  • Salt and pepper, to taste

Option 2: Simple Tomato Sauce

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 (28 oz) can crushed tomatoes

  • 1 tsp dried basil

  • 1 tsp sugar

  • Salt and pepper, to taste

For the Noodles:

  • 12 oz egg noodles or wide pasta

  • 2 tbsp butter

  • Salt, for pasta water

  • Optional: 1–2 tbsp chopped fresh parsley

Instructions:

Step 1: Make the Meatballs

In a large mixing bowl, combine the ground meat, egg, breadcrumbs, Parmesan (if using), milk, minced garlic, onion, Worcestershire sauce, salt, pepper, and herbs. Mix gently with your hands or a fork until just combined — do not overwork.

Form into 1 ½-inch balls (you should get about 16–18 meatballs).

Step 2: Sear the Meatballs

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the meatballs in batches, being careful not to overcrowd the pan.

Sear on all sides until browned, about 6–8 minutes total, turning occasionally. Remove from pan and set aside.

Tip: Meatballs don’t need to be fully cooked at this stage — they will finish cooking in the sauce.

Step 3: Cook the Sauce

Choose your sauce option:

Brown Gravy Sauce:

  1. In the same skillet (leave the brown bits), melt 2 tbsp butter.

  2. Whisk in flour and cook for 1 minute.

  3. Slowly add beef broth, whisking constantly.

  4. Stir in Worcestershire, onion powder, salt, and pepper.

  5. Simmer for 5–7 minutes until thickened.

Return seared meatballs to the pan, cover, and simmer in the gravy for 10–12 minutes, until fully cooked (internal temp of 160°F).

Tomato Sauce:

  1. In the skillet, add olive oil and sauté garlic for 30 seconds.

  2. Add crushed tomatoes, basil, sugar, salt, and pepper.

  3. Simmer for 10 minutes.

  4. Add meatballs and simmer covered for another 10–12 minutes, or until cooked through.

Step 4: Cook the Noodles

While the meatballs are finishing, bring a large pot of salted water to a boil. Add egg noodles and cook according to package directions (usually about 8–10 minutes).

Drain, then toss with butter and parsley.

Step 5: Serve

Plate the noodles in a shallow bowl or plate. Top with generous spoonfuls of meatballs and sauce. Garnish with more Parmesan and fresh herbs if desired.

Optional Pairing: Add a green salad and a slice of garlic bread for a full meal.
