NEW YORK CHEESECAKE

New York cheesecake is known for its dense and creamy texture with a rich, tangy flavor. Here’s a classic recipe for making New York-style cheesecake:

Ingredients:

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the Cheesecake Filling:

  • 4 packages (32 ounces total) cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 4 large eggs, room temperature
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt

Instructions:

1. Preheat the Oven:

Preheat your oven to 325°F (163°C). Grease the bottom and sides of a 9-inch springform pan.

2. Make the Crust:

a. In a bowl, combine graham cracker crumbs, melted butter, and sugar until the crumbs are evenly moistened.

b. Press the mixture into the bottom of the prepared springform pan to create an even crust.

3. Prepare the Cheesecake Filling:

a. In a large mixing bowl, beat the softened cream cheese until smooth and creamy.

b. Add sugar and beat until well combined.

c. Mix in sour cream and vanilla extract until smooth.

d. Add eggs one at a time, beating well after each addition.

e. In a separate bowl, whisk together flour and salt. Gradually add this mixture to the cream cheese batter, mixing until just combined. Be careful not to overmix.

4. Bake the Cheesecake:

a. Pour the cheesecake batter over the prepared crust in the springform pan.

b. Smooth the top with a spatula.

c. Bake in the preheated oven for about 1 hour and 15 minutes, or until the center is set and the top is lightly browned. The center may still be slightly jiggly, but it will firm up as it cools.

5. Cool and Chill:

a. Allow the cheesecake to cool in the oven with the door ajar for about an hour.

b. Remove the cheesecake from the oven and let it cool to room temperature.

c. Refrigerate the cheesecake for at least 4 hours or overnight before serving.

6. Serve:

a. Run a knife around the edge of the springform pan to loosen the cheesecake.

b. Remove the sides of the pan.

c. Slice and serve the New York cheesecake chilled.
