Ingredients:

  • 4 Italian sausages (sweet or hot), casings removed
  • 1 bunch broccoli rabe, trimmed and chopped
  • 2 cloves garlic, minced
  • 4 slices Italian bread or ciabatta
  • 4 slices provolone cheese
  • Olive oil, for drizzling
  • Salt and pepper to taste

Instructions:

  1. Cook Sausage and Broccoli Rabe:
    • In a large skillet, cook the Italian sausages over medium heat, breaking them apart with a spoon, until browned and cooked through, about 8-10 minutes. Remove the cooked sausage from the skillet and set aside.
    • In the same skillet, add a drizzle of olive oil if needed, then add the minced garlic and chopped broccoli rabe. Sauté until the broccoli rabe is tender, about 5 minutes. Season with salt and pepper to taste.
  2. Assemble Panini:
    • Preheat a panini press or grill pan over medium heat.
    • On each slice of Italian bread or ciabatta, layer a slice of provolone cheese, cooked sausage, and sautéed broccoli rabe. Top with another slice of provolone cheese and cover with another slice of bread.
  3. Grill Panini:
    • Drizzle the outsides of the sandwiches lightly with olive oil. Place the sandwiches on the panini press or grill pan and grill until the bread is crispy and golden brown and the cheese is melted, about 3-4 minutes per side.
  4. Serve:
    • Remove the panini from the grill and let them cool slightly before slicing.
    • Slice each panino in half diagonally and serve hot.
  5. Enjoy:
    • Enjoy these delicious sausage and broccoli rabe panini as a satisfying lunch or dinner option!

Note: You can customize these panini by adding roasted red peppers, caramelized onions, or your favorite condiments such as Dijon mustard or pesto. Feel free to use any type of bread you prefer for the panini, such as sourdough or focaccia.
