Title: Parmesan Meatloaf

Ingredients:

For the Meatloaf:

  • 1.5 pounds (680g) ground beef
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 2 large eggs, beaten
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Glaze:

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare Meatloaf Mixture:
    • In a large mixing bowl, combine ground beef, breadcrumbs, grated Parmesan cheese, milk, beaten eggs, chopped onion, minced garlic, dried oregano, dried basil, salt, and black pepper. Mix until well combined.
  3. Shape Meatloaf:
    • Form the meat mixture into a loaf shape and place it in a greased 9×5-inch loaf pan.
  4. Prepare Glaze:
    • In a small bowl, mix together ketchup, brown sugar, and Dijon mustard to create the glaze.
  5. Apply Glaze:
    • Brush half of the glaze over the top of the meatloaf, ensuring an even coating.
  6. Bake:
    • Bake the meatloaf in the preheated oven for about 45 minutes.
  7. Reapply Glaze:
    • After 45 minutes, remove the meatloaf from the oven and brush the remaining glaze over the top.
  8. Continue Baking:
    • Return the meatloaf to the oven and continue baking for an additional 15-20 minutes or until the internal temperature reaches 160°F (71°C).
  9. Rest and Slice:
    • Allow the Parmesan Meatloaf to rest for a few minutes before slicing.
  10. Serve:
    • Slice and serve the meatloaf, and optionally garnish with additional grated Parmesan and fresh herbs.
