Reginelle aka sesame cookies

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup milk
  • 1 cup sesame seeds, toasted

Instructions

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients:
    • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut in Butter:
    • Add the cold butter pieces to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
  4. Add Wet Ingredients:
    • In a small bowl, whisk together the eggs, vanilla extract, and milk. Add this mixture to the flour mixture and stir until a dough forms.
  5. Shape the Cookies:
    • Divide the dough into small portions and roll each portion into a log about 1/2 inch in diameter. Cut each log into 2-inch pieces.
  6. Coat with Sesame Seeds:
    • Place the toasted sesame seeds in a shallow dish. Roll each cookie piece in the sesame seeds, pressing gently to ensure the seeds adhere.
  7. Bake:
    • Place the sesame-coated cookies on the prepared baking sheet. Bake in the preheated oven for 15-20 minutes, or until the cookies are golden brown.
  8. Cool and Serve:
    • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
