Reginelle aka sesame cookies
Preparation Time: 20 minutes
Cooking Time: 15-20 minutes
Total Time: 35-40 minutes
Servings: 24 cookies
Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, cold and cut into small pieces
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup milk
- 1 cup sesame seeds, toasted
Instructions
- Preheat Oven:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix Dry Ingredients:
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in Butter:
- Add the cold butter pieces to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
- Add Wet Ingredients:
- In a small bowl, whisk together the eggs, vanilla extract, and milk. Add this mixture to the flour mixture and stir until a dough forms.
- Shape the Cookies:
- Divide the dough into small portions and roll each portion into a log about 1/2 inch in diameter. Cut each log into 2-inch pieces.
- Coat with Sesame Seeds:
- Place the toasted sesame seeds in a shallow dish. Roll each cookie piece in the sesame seeds, pressing gently to ensure the seeds adhere.
- Bake:
- Place the sesame-coated cookies on the prepared baking sheet. Bake in the preheated oven for 15-20 minutes, or until the cookies are golden brown.
- Cool and Serve:
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Tips:
- Toast the sesame seeds in a dry skillet over medium heat, stirring frequently, until golden brown and fragrant. This will enhance their flavor.
- Ensure the butter is cold when adding it to the flour mixture for a tender, crumbly texture.
- Store the cookies in an airtight container at room temperature for up to a week.
Enjoy your Reginelle, a delightful and crunchy sesame cookie perfect with a cup of coffee or tea!
