Ingredients

For the Minced Meat Filling:

  • 1 tablespoon olive oil

  • 1 medium onion, finely diced

  • 2 cloves garlic, minced

  • 1 pound (450g) ground beef (or a mix of beef and pork/lamb)

  • 1 teaspoon dried oregano

  • ½ teaspoon paprika

  • Salt and freshly ground black pepper, to taste

  • 2 tablespoons tomato paste

  • 1 tablespoon Worcestershire sauce

  • 2 tablespoons fresh parsley, chopped

For Assembly:

  • 1 sheet (approx. 8 oz or 225g) store-bought puff pastry, thawed

  • 1 cup (100g) shredded mozzarella cheese

  • ½ cup (50g) shredded cheddar cheese

  • 1 egg, beaten (for the egg wash)

  • 1 tablespoon sesame seeds or poppy seeds (optional)

Instructions

Step 1: Prepare the Filling

Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 4-5 minutes until softened and translucent. Add the minced garlic and cook for another minute until fragrant.

Increase the heat to medium-high and add the ground beef. Cook, breaking it up with a spoon, until it is browned and cooked through, about 5-7 minutes. Drain off any excess fat.

Reduce the heat back to medium. Stir in the oregano, paprika, salt, and pepper. Add the tomato paste and Worcestershire sauce, stirring constantly for one minute to coat the meat and cook out the raw taste of the tomato paste. Remove from heat and stir in the fresh parsley. Allow the mixture to cool for 10-15 minutes. (This cooling step is crucial to prevent the pastry from becoming soggy.)

Step 2: Assemble the Pastry

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

On a lightly floured surface, gently roll out the thawed puff pastry sheet to smooth out any folds. Carefully transfer it to the prepared baking sheet.

Spoon the cooled minced meat mixture onto the center of the pastry sheet, spreading it evenly and leaving a 1-inch (2.5 cm) border around all edges.

Sprinkle the shredded mozzarella and cheddar cheese evenly over the meat mixture.

Step 3: Create the Crust and Bake

Fold the bare edges of the pastry over the filling, creating a rustic, rectangular crust. Press the corners gently to seal. Using a pastry brush, generously brush the exposed pastry crust with the beaten egg wash. This will give it a beautiful, golden-brown shine when baked. Sprinkle with sesame or poppy seeds, if using.

Step 4: Bake to Perfection

Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the pastry is puffed up, deep golden brown, and flaky, and the cheese is melted and bubbly.

Step 5: Serve

Remove the pastry from the oven and let it rest on the baking sheet for 5 minutes before slicing. This allows the cheesy filling to set slightly, making it easier to cut. Slice into squares and serve warm.

Chef’s Notes & Tips

  • Thawing Puff Pastry: The key to flaky pastry is to thaw it slowly according to package directions, usually in the refrigerator for a few hours. Never thaw at room temperature if you can avoid it, as it can become sticky and difficult to work with.

  • Customize Your Filling: Feel free to add ½ cup of finely diced bell peppers or mushrooms to the onion for extra vegetables. A pinch of chili flakes will add a nice kick.

  • Make it a “Wellington”: For a more formal presentation, you can place a second sheet of rolled-out pastry over the top, seal the edges tightly, and brush the entire top with egg wash before baking.

  • Make-Ahead: You can prepare the meat filling up to 2 days in advance and store it in the refrigerator. Assemble and bake when ready to serve.
