Instructions:

  1. Prepare Ingredients:
    • Core and chop the cabbage, finely chop the onion, mince the garlic, dice the tomatoes, and finely chop the jalapeño.
  2. Saute Aromatics:
    • In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until softened. Add minced garlic and chopped jalapeño, and cook for an additional 1-2 minutes.
  3. Spice it Up:
    • Stir in ground cumin, ground coriander, smoked paprika, cayenne pepper, black pepper, and salt. Cook for another 2 minutes to toast the spices.
  4. Combine in Slow Cooker:
    • Transfer the sautéed mixture to the slow cooker. Add the chopped cabbage and diced tomatoes. Mix everything well.
  5. Pour in Broth:
    • Pour vegetable broth over the cabbage mixture. Stir to combine.
  6. Slow Cook:
    • Cover and cook on low for 4-6 hours or until the cabbage is tender, and the flavors meld together.
  7. Serve:
    • Once done, taste and adjust seasoning if needed. Serve the slow-cooked spicy cabbage hot, garnished with fresh cilantro, and with lime wedges on the side.
