Ingredients

  • 1 cup (240g) active sourdough starter
  • 1 cup (240ml) warm water
  • 1/4 cup (60g) unsalted butter, melted and cooled
  • 2 tbsp (30g) honey
  • 1 large egg
  • 4 cups (480g) bread flour
  • 1 1/2 tsp (9g) salt

Instructions

  1. Mix the Dough:
    • In a large mixing bowl, combine the active sourdough starter, warm water, melted butter, honey, and egg. Stir until well mixed.
    • Gradually add the bread flour and salt, mixing until a shaggy dough forms.
  2. Knead the Dough:
    • Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until the dough is smooth and elastic. You can also use a stand mixer with a dough hook attachment on medium speed for 5-7 minutes.
  3. Bulk Fermentation:
    • Place the dough in a greased bowl, cover it with a damp cloth or plastic wrap, and let it rise at room temperature for 8-12 hours or until doubled in size. For a slower rise, you can refrigerate the dough for 24-48 hours, then bring it to room temperature before proceeding.
  4. Shape the Rolls:
    • Punch down the dough and divide it into 8 equal portions. Shape each portion into a smooth ball and place them on a parchment-lined baking sheet, spacing them a few inches apart. Cover the rolls with a damp cloth or plastic wrap and let them rise for 1-2 hours until puffy.
  5. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  6. Bake the Rolls:
    • Brush the tops of the rolls with melted butter or an egg wash (1 beaten egg mixed with 1 tbsp water) for a shiny finish. Bake in the preheated oven for 20-25 minutes until the rolls are golden brown and sound hollow when tapped on the bottom.
  7. Cool and Serve:
