Ingredients

For the Pastry:

  • 1 cup (240g) active sourdough starter discard
  • 2½ cups (315g) all-purpose flour
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • 1 cup (230g) unsalted butter, cold and cubed
  • 2–4 tablespoons ice water

For the Filling:

  • ½ cup fruit jam, nut butter, or chocolate spread
  • Optional: A sprinkle of cinnamon sugar for extra flavor

For the Glaze:

  • 1 cup (120g) powdered sugar
  • 2–3 tablespoons milk or cream
  • ½ teaspoon vanilla extract
  • Optional: Food coloring and sprinkles for decoration

Instructions

Step 1: Make the Pastry

  1. In a large bowl, whisk together the flour, sugar, and salt.
  2. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Mix in the sourdough starter and ice water, one tablespoon at a time, until the dough just comes together. Avoid overmixing.
  4. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour or up to overnight.

Step 2: Roll and Fill

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll out one disc of dough on a lightly floured surface to about ⅛-inch thickness. Cut into rectangles (about 3×4 inches). Repeat with the second disc of dough.
  3. Place half the rectangles on the prepared baking sheet. Spoon 1–2 teaspoons of filling onto the center of each. Spread slightly, leaving a border around the edges.
  4. Brush the edges with water, then top with another rectangle of dough. Press the edges to seal and crimp with a fork.
  5. Use a fork to poke a few holes in the top for steam to escape.

Step 3: Bake

  1. Chill the assembled Pop-Tarts in the fridge for 15 minutes before baking.
  2. Bake for 20–25 minutes, or until golden brown. Let cool completely on a wire rack.

Step 4: Add the Glaze

  1. Mix the powdered sugar, milk, and vanilla extract to create a glaze. Adjust the consistency by adding more milk or powdered sugar.
  2. Spread the glaze over the cooled Pop-Tarts and decorate with sprinkles or a drizzle of colored glaze if desired.
