Description

Ingredients
For the Pastry:
- 1 cup (240g) active sourdough starter discard
- 2½ cups (315g) all-purpose flour
- 1 tablespoon granulated sugar
- ½ teaspoon salt
- 1 cup (230g) unsalted butter, cold and cubed
- 2–4 tablespoons ice water
For the Filling:
- ½ cup fruit jam, nut butter, or chocolate spread
- Optional: A sprinkle of cinnamon sugar for extra flavor
For the Glaze:
- 1 cup (120g) powdered sugar
- 2–3 tablespoons milk or cream
- ½ teaspoon vanilla extract
- Optional: Food coloring and sprinkles for decoration
Instructions
Step 1: Make the Pastry
- In a large bowl, whisk together the flour, sugar, and salt.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Mix in the sourdough starter and ice water, one tablespoon at a time, until the dough just comes together. Avoid overmixing.
- Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour or up to overnight.
Step 2: Roll and Fill
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out one disc of dough on a lightly floured surface to about ⅛-inch thickness. Cut into rectangles (about 3×4 inches). Repeat with the second disc of dough.
- Place half the rectangles on the prepared baking sheet. Spoon 1–2 teaspoons of filling onto the center of each. Spread slightly, leaving a border around the edges.
- Brush the edges with water, then top with another rectangle of dough. Press the edges to seal and crimp with a fork.
- Use a fork to poke a few holes in the top for steam to escape.
Step 3: Bake
- Chill the assembled Pop-Tarts in the fridge for 15 minutes before baking.
- Bake for 20–25 minutes, or until golden brown. Let cool completely on a wire rack.
Step 4: Add the Glaze
- Mix the powdered sugar, milk, and vanilla extract to create a glaze. Adjust the consistency by adding more milk or powdered sugar.
- Spread the glaze over the cooled Pop-Tarts and decorate with sprinkles or a drizzle of colored glaze if desired.
