Ingredients

For the Steak:

  • 2 ribeye or New York strip steaks (about 10 oz each)

  • 2 tbsp olive oil or vegetable oil

  • Salt and freshly ground black pepper

  • 2 cloves garlic, smashed

  • 2 sprigs fresh rosemary or thyme

  • 2 tbsp unsalted butter

For Garlic Mashed Potatoes:

  • 3 large russet potatoes, peeled and chopped

  • Medium pot (for potatoes)

  • Steamer or pot with lid (for green beans)

  • Tongs

  • Potato masher


Instructions

Step 1: Prepare the Potatoes

  1. Place peeled and chopped potatoes and garlic cloves in a pot. Cover with cold water and add a pinch of salt.

  2. Bring to a boil and cook until potatoes are tender, about 15 minutes. Drain well.

Step 2: Cook the Steak

  1. Pat steaks dry with paper towels. Generously season both sides with salt and pepper.

  2. Heat olive oil in a cast iron skillet over high heat until shimmering.

  3. Add steaks and sear for 3–4 minutes per side for medium-rare (adjust time for preferred doneness).

  4. Add smashed garlic, rosemary/thyme, and butter to the pan during the last 2 minutes. Spoon melted butter over the steaks to baste them.

  5. Remove steaks from the pan and rest on a cutting board for 5 minutes.

Step 3: Mash the Potatoes

  1. Return potatoes and garlic to the pot or bowl. Add butter and cream.

  2. Mash until smooth and creamy. Season with salt and pepper to taste.

Step 4: Cook Green Beans

  1. Heat olive oil in a skillet over medium heat.

  2. Add garlic and sauté until fragrant (30 seconds).

  3. Add green beans, season with salt and pepper, and cook for 5–7 minutes until tender-crisp.

Step 5: Plate and Serve

  1. Slice steak against the grain and arrange on plates.

  2. Serve with garlic mashed potatoes and sautéed green beans.

  3. Optionally, drizzle pan juices over the steak for extra flavor.
