When warm weather hits or you need a quick and easy dessert, this Strawberry Cool Whip Delight is the perfect go-to. It’s light, fruity, creamy, and layered with flavor. Best of all? No baking required.

This crowd-pleasing treat comes together in under 20 minutes and can be made ahead — making it a favorite for summer barbecues, baby showers, Easter brunches, or weeknight desserts. With layers of crushed cookies or graham crackers, whipped topping, cream cheese, and strawberries, every bite is a cool, refreshing delight.

 Ingredients

 Crust:

  • 2 cups crushed graham crackers or Golden Oreos

  • 1/2 cup (1 stick) unsalted butter, melted

 Cream Cheese Layer:

  • 225g (8 oz) cream cheese, softened

  • 1/2 cup powdered sugar

  • 1 tub (8 oz) Cool Whip, thawed

 Strawberry Layer:

  • 2 cups fresh strawberries, sliced (or thawed frozen strawberries)

  • 1 box (3 oz) strawberry Jell-O

  • 1 cup boiling water

  • 1/2 cup cold water

  • 1 tub (8 oz) Cool Whip (for topping)

  • Optional: fresh mint, extra sliced strawberries for garnish

 Equipment Needed

  • 9×9 inch or 9×13 inch dish (depending on layer thickness)

  • Mixing bowls

  • Hand mixer or stand mixer

  • Spatula

  • Measuring cups

  • Whisk

 Instructions

Step 1: Make the Crust

  1. In a bowl, combine crushed graham crackers or Oreos with melted butter.

  2. Press the mixture into the bottom of your dish to form an even layer.

  3. Place in the fridge or freezer to set while you prep the filling.

Step 2: Cream Cheese Layer

  1. In a mixing bowl, beat the cream cheese until smooth.

  2. Add powdered sugar and mix until combined.

  3. Fold in Cool Whip gently until light and fluffy.

  4. Spread this mixture evenly over the chilled crust.

Step 3: Strawberry Jell-O Layer

  1. In a bowl, dissolve the strawberry Jell-O in 1 cup of boiling water. Stir for about 2 minutes.

  2. Add 1/2 cup of cold water, then set aside to cool slightly (do not let it fully set).

  3. Add sliced strawberries to the Jell-O and stir to combine.

  4. Carefully pour the strawberry mixture over the cream cheese layer.

  5. Refrigerate for at least 4 hours or until the Jell-O is fully set.

Step 4: Top It Off

  1. Once the Jell-O layer is set, spread the second tub of Cool Whip on top for a fluffy finish.

  2. Garnish with fresh strawberries and mint leaves, if desired.

 Serving Suggestions

  • Cut into squares and serve chilled.

  • Serve with extra strawberries or a drizzle of strawberry syrup.

  • Great paired with lemonade or a cold glass of milk.
