Succulent Garlic Butter Steak Bites

Succulent Garlic Butter Steak Bites Recipe

Ingredients:

  • 1 ½ lb (680g) steak, cut into 1-inch cubes (such as sirloin, ribeye, or tenderloin)
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions:

  1. Prep the Steak:
    • Pat the steak cubes dry with paper towels to remove excess moisture (this helps achieve a good sear).
    • Season the steak cubes generously with salt and black pepper.
  2. Sear the Steak Bites:
    • Heat a large skillet over medium-high heat and add the olive oil.
    • Once the oil is hot and shimmering, add the steak cubes in a single layer. Be careful not to overcrowd the pan; cook in batches if necessary.
    • Sear the steak cubes for about 2-3 minutes per side, or until they develop a deep, golden-brown crust. The interior should be medium-rare to medium, depending on your preference.
    • Remove the steak bites from the skillet and set aside on a plate.
  3. Make the Garlic Butter Sauce:
    • In the same skillet, lower the heat to medium and add 2 tbsp of the butter.
    • Once the butter has melted, add the minced garlic and fresh thyme. Sauté for about 30 seconds to 1 minute, or until the garlic is fragrant and slightly golden. Be careful not to burn the garlic.
    • Add the remaining 2 tbsp of butter to the skillet and stir until melted.
  4. Combine and Serve:
    • Return the steak bites to the skillet and toss them in the garlic butter sauce until they are well-coated and heated through, about 1-2 minutes.
    • Remove from heat and sprinkle with chopped fresh parsley.
  5. Serve:
    • Transfer the steak bites to a serving platter.
    • Serve immediately with toothpicks as an appetizer or with a side of your choice for a main course.

Tips:

  • Steak Choice: Sirloin is a great choice for its balance of tenderness and flavor. Ribeye or tenderloin will be even more tender and flavorful but more expensive.
  • Don’t Overcrowd the Pan: For the best sear, cook the steak bites in batches if needed. Overcrowding will steam the steak instead of searing it.
  • Garlic Butter Sauce: Be careful not to burn the garlic, as it can become bitter. Keep the heat moderate while making the sauce.
  • Additional Flavors: For added flavor, try adding a splash of Worcestershire sauce, a squeeze of lemon juice, or a pinch of red pepper flakes to the garlic butter sauce.

Serving Suggestions:

  • Serve these garlic butter steak bites with a side of mashed potatoes, roasted vegetables, or over a bed of rice.
  • They also make a great appetizer on their own or with a dipping sauce like chimichurri or garlic aioli.
