Air fryer stuffed chicken breast

Ingredients:

For the Stuffed Chicken Breast:

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup spinach, chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup feta cheese, crumbled
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil

For Coating:

  • 1 cup breadcrumbs (panko or regular)
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Cooking spray

Instructions:

1. Preheat Air Fryer:

  • Preheat your air fryer to 375°F (190°C).

2. Prepare Chicken Breasts:

  • Butterfly each chicken breast by slicing horizontally through the middle, but not all the way through, creating a pocket for the stuffing. Season both sides with salt and pepper.

3. Make the Stuffing:

  • In a bowl, combine chopped spinach, sun-dried tomatoes, feta cheese, dried oregano, and garlic powder.

4. Stuff the Chicken:

  • Stuff each chicken breast with the spinach and feta mixture, pressing the edges to seal.

5. Coat the Chicken:

  • In a separate bowl, mix breadcrumbs, paprika, and dried thyme. Brush each stuffed chicken breast with olive oil and coat them evenly with the breadcrumb mixture, pressing the crumbs onto the chicken.

6. Air Fry:

  • Lightly coat the air fryer basket with cooking spray. Place the stuffed chicken breasts in the basket, leaving space between them. Spray the tops with cooking spray.

7. Air Fry:

  • Air fry at 375°F (190°C) for 20 minutes, flipping halfway through, or until the chicken reaches an internal temperature of 165°F (74°C).

8. Rest and Serve:

  • Allow the stuffed chicken breasts to rest for a few minutes before slicing. Serve with your favorite sides.
