  • Salt and pepper to taste
  • 1 green bell pepper, diced
  • 1/2 cup diced onion
  • 1/4 cup chopped fresh chives (optional)
  • Cooking spray for greasing

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray.
  2. Layer Tater Tots:
    • Arrange the frozen tater tots in a single layer at the bottom of the prepared baking dish.
  3. Cook Sausage:
    • In a skillet over medium heat, cook the breakfast sausage until browned and cooked through. Drain any excess grease.
  4. Layer Cheese and Sausage:
    • Sprinkle the cooked and crumbled sausage over the tater tots.
    • Mix the shredded cheddar and mozzarella cheeses together, then sprinkle the cheese evenly over the sausage.
  5. Prepare Egg Mixture:
    • In a bowl, whisk together eggs, milk, Dijon mustard, salt, and pepper until well combined.
