  • 1 lb breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 8 large eggs
  • 1 cup milk
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 green bell pepper, diced
  • 1/2 cup diced onion
  • 1/4 cup chopped fresh chives (optional)
  • Cooking spray for greasing

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray.
  2. Layer Tater Tots:
    • Arrange the frozen tater tots in a single layer at the bottom of the prepared baking dish.
  3. Cook Sausage:
    • In a skillet over medium heat, cook the breakfast sausage until browned and cooked through. Drain any excess grease.
  4. Layer Cheese and Sausage:
    • Sprinkle the cooked and crumbled sausage over the tater tots.
    • Mix the shredded cheddar and mozzarella cheeses together, then sprinkle the cheese evenly over the sausage.
  5. Prepare Egg Mixture:
    • In a bowl, whisk together eggs, milk, Dijon mustard, salt, and pepper until well combined.
  6. Add Vegetables:
    • Stir in diced green bell pepper and onion into the egg mixture.
  7. Pour Over Layers:
    • Pour the egg mixture evenly over the tater tots, sausage, and cheese layers.
  8. Bake:
    • Bake in the preheated oven for 40-45 minutes or until the top is golden brown, and a toothpick inserted into the center comes out clean.
  9. Garnish:
    • If desired, sprinkle chopped fresh chives over the casserole during the last 5 minutes of baking.
  10. Cool and Serve:
    • Allow the casserole to cool for a few minutes before slicing. Serve warm.
