Vegan Stir Fry

Ingredients:
For the Stir Fry Sauce:
- 3 tablespoons soy sauce (or tamari for gluten-free)
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon maple syrup or agave nectar
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch (optional, for thickening)
For the Stir Fry:
- 1 tablespoon vegetable oil
- 1 block firm tofu, pressed and cubed
- 3 cups mixed vegetables (broccoli florets, bell peppers, carrots, snap peas, etc.)
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 cup broccoli florets
- 1 cup sliced bell peppers (assorted colors)
- 1 cup sliced carrots
- 1 cup snap peas, trimmed
- Cooked brown rice or quinoa for serving
- Sesame seeds and chopped green onions for garnish
Instructions:
Prepare the Stir Fry Sauce:
- In a bowl, whisk together soy sauce, hoisin sauce, rice vinegar, maple syrup, sesame oil, and cornstarch (if using). Set aside.
Cook the Tofu:
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add cubed tofu and cook until all sides are golden brown. Remove from the skillet and set aside.
Stir Fry Vegetables:
- In the same skillet, add a bit more oil if needed.
- Add minced garlic and grated ginger, stir-frying for about 30 seconds until fragrant.
- Add broccoli, bell peppers, carrots, and snap peas. Stir-fry for 5-7 minutes until the vegetables are crisp-tender.
Combine and Add Sauce:
- Return the cooked tofu to the skillet with the stir-fried vegetables.
- Pour the prepared stir fry sauce over the tofu and vegetables.
- Toss everything together until well coated and heated through.
Serve:
- Serve the vegan stir fry over cooked brown rice or quinoa.
- Garnish with sesame seeds and chopped green onions.
