Cauliflower Soup

Ingredients:
- 1 large cauliflower head, chopped into florets
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 medium potatoes, peeled and diced
- 4 cups vegetable broth
- 1 cup milk (whole or 2%)
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and pepper, to taste
- 1/4 cup heavy cream (optional, for extra creaminess)
- Chopped fresh parsley, for garnish
Instructions:
- Prepare Vegetables:
- Chop the cauliflower into florets, dice the potatoes, and chop the onion and garlic.
- Sauté Onion and Garlic:
- In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant.
- Add Flour and Herbs:
- Sprinkle the flour over the sautéed onions and garlic. Stir continuously for 1-2 minutes to form a roux. Add dried thyme and rosemary, continuing to stir.
- Add Cauliflower and Potatoes:
- Add the cauliflower florets and diced potatoes to the pot. Stir the vegetables to coat them with the roux.
- Pour in Broth:
- Pour in the vegetable broth and bring the mixture to a gentle boil. Reduce heat to low, cover the pot, and let it simmer until the cauliflower and potatoes are tender (about 15-20 minutes).
- Blend Soup:
- Use an immersion blender to blend the soup until smooth. Alternatively, transfer the mixture to a blender in batches, blending until smooth. Be cautious when blending hot liquids.
- Add Milk and Seasonings:
- Pour in the milk and season the soup with salt and pepper. Stir well and let it simmer for an additional 5-10 minutes.
- Adjust Consistency:
- If desired, add heavy cream for extra creaminess. Adjust the consistency with more milk or broth if needed.
- Check for Seasoning:
- Taste and adjust the seasoning as per your preference.
- Serve:
- Ladle the creamy cauliflower soup into bowls. Garnish with chopped fresh parsley.
