For the Topping:
- 1/4 cup melted butter
- 1/4 cup grated Parmesan cheese

Instructions
- Prepare the Dough:
- In a small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine the milk, sugar, melted butter, salt, vanilla extract, and eggs.
- Add the yeast mixture and mix well.
- Gradually add the flour, one cup at a time, mixing until a soft dough forms.
- Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
- Prepare the Filling:
- In a large skillet, melt the butter over medium heat.
- Add the chopped onion, bell pepper, celery, and garlic. Sauté until the vegetables are soft, about 5 minutes.
- Stir in the crawfish tails and Cajun seasoning. Cook for another 5 minutes until the crawfish are cooked through.
- Remove from heat and stir in the grated cheddar cheese, Parmesan cheese, and chopped green onions. Season with salt and pepper to taste. Let it cool slightly.
- Assemble the King Cake:
- Preheat your oven to 350°F (175°C).
- Punch down the risen dough and turn it out onto a floured surface.
- Roll the dough into a large rectangle, about 10×20 inches.
- Spread the crawfish filling evenly over the dough, leaving a small border around the edges.
- Starting with the long side, roll the dough up tightly into a log.
- Shape the log into a ring and pinch the ends together to seal.
- Place the ring on a greased baking sheet. Cover and let it rise for another 30 minutes.
- Bake the King Cake:
- Brush the top of the king cake with the melted butter.
- Bake in the preheated oven for 30-35 minutes, or until golden brown and cooked through.
- Remove from the oven and brush with more melted butter. Sprinkle with grated Parmesan cheese and chopped parsley.
- Serve:
- Allow the king cake to cool slightly before slicing and serving.
- Serve warm and enjoy the delicious combination of savory crawfish filling and soft, buttery dough.
