Steak shirmp and veggie skillet

Ingredients

  • 1 lb (450g) sirloin steak, cut into strips
  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 1 red onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

  1. Prepare the Ingredients:
    • Cut the steak into thin strips and season with salt, pepper, smoked paprika, ground cumin, and chili powder.
    • Peel and devein the shrimp, then pat them dry with a paper towel.
  2. Cook the Steak:
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
    • Add the steak strips to the skillet and cook for 3-4 minutes, until browned and cooked to your desired doneness.
    • Remove the steak from the skillet and set it aside.
  3. Cook the Veggies:
    • In the same skillet, add the remaining 1 tablespoon of olive oil.
    • Add the sliced red, yellow, and green bell peppers, zucchini, yellow squash, and red onion.
    • Cook the vegetables for 5-7 minutes, stirring occasionally, until they are tender but still crisp.
  4. Add the Shrimp:
    • Push the vegetables to the sides of the skillet and add the minced garlic to the center.
    • Add the shrimp to the skillet and cook for 2-3 minutes on each side, until they are pink and opaque.
  5. Combine and Serve:
    • Return the cooked steak strips to the skillet and toss everything together to combine.
    • Cook for an additional 2 minutes to heat everything through.
    • Remove from heat and sprinkle with chopped fresh parsley.
    • Serve immediately with lemon wedges on the side.
