Ingredients
- 4 medium potatoes, washed and thinly sliced
- 1 large onion, thinly sliced
- 6 slices bacon, chopped
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese
- 2 tablespoons fresh parsley, chopped (optional)
Instructions
- Preheat the Griddle:
- Preheat your Blackstone griddle to medium-high heat.
- Cook the Bacon:
- Once the griddle is hot, add the chopped bacon and cook until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon grease on the griddle.
- Prepare the Potatoes:
- In a large bowl, toss the sliced potatoes and onions with olive oil, garlic powder, paprika, dried thyme, salt, and pepper.
- Cook the Potatoes:
- Add the potato and onion mixture to the griddle, spreading it out evenly in the bacon grease.
- Cook for about 15-20 minutes, turning occasionally with a spatula to ensure even cooking. The potatoes should be golden brown and crispy on the outside, and tender on the inside.
- Add Cheese and Bacon:
- Once the potatoes are cooked, sprinkle the shredded cheddar cheese and cooked bacon over the top.
- Continue cooking for 2-3 minutes until the cheese is melted.
- Serve:
- Remove the potatoes from the griddle and transfer them to a serving dish.
- Sprinkle with fresh parsley, if using, for an added touch of color and flavor.
