Ingredients
- 1.5 pounds ground beef
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 slices rye bread (or sourdough or your preferred bread)
- 8 slices Swiss cheese (or American cheese)
- 1 large onion, thinly sliced
- 4 tablespoons butter, divided
- 1 tablespoon olive oil
- Optional: pickles, for serving
Instructions
- Preheat the Blackstone Griddle:
- Preheat your Blackstone griddle to medium-high heat.
- Caramelize the Onions:
- Add 2 tablespoons of butter and 1 tablespoon of olive oil to the griddle.
- Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 10-15 minutes. Move the onions to the side of the griddle to keep warm.
- Form the Patties:
- While the onions are cooking, season the ground beef with salt and pepper. Form the ground beef into 4 equal-sized patties, making them slightly larger than the bread slices to account for shrinkage during cooking.
- Cook the Patties:
- Add the patties to the griddle and cook for about 4-5 minutes per side, or until they reach your desired level of doneness. Remove the patties from the griddle and set aside.
- Assemble the Patty Melts:
- Place a slice of cheese on each slice of bread. Add a cooked patty on top of half of the bread slices with cheese.
- Top each patty with caramelized onions and another slice of cheese.
- Place another slice of bread on top to form a sandwich.
- Grill the Sandwiches:
- Add the remaining 2 tablespoons of butter to the griddle. Once melted, place the assembled sandwiches on the griddle.
- Cook the sandwiches for about 2-3 minutes per side, or until the bread is golden brown and crispy, and the cheese is melted.
- Serve:
- Remove the patty melts from the griddle and let them rest for a minute before slicing them in half.
- Serve with pickles on the side if desired.
