Air Fryer Garlic Butter Steak Bites and Potatoes

Ingredients

  • 1.5 lbs sirloin steak, cut into bite-sized pieces
  • 1 lb baby potatoes, halved or quartered if large
  • 3 tbsp olive oil
  • 4 tbsp unsalted butter, melted
  • 4 garlic cloves, minced
  • 1 tbsp fresh rosemary, finely chopped (or 1 tsp dried rosemary)
  • 1 tbsp fresh thyme, finely chopped (or 1 tsp dried thyme)
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Potatoes:
    • In a large bowl, toss the baby potatoes with 2 tbsp olive oil, 1 minced garlic clove, half the rosemary, half the thyme, paprika, salt, and black pepper until evenly coated.
  2. Preheat the Air Fryer:
    • Preheat your air fryer to 400°F (200°C) for about 3-5 minutes.
  3. Cook the Potatoes:
    • Place the seasoned potatoes in the air fryer basket in a single layer.
    • Air fry at 400°F (200°C) for 15 minutes, shaking the basket halfway through the cooking time to ensure even cooking.
  4. Prepare the Steak Bites:
    • In another large bowl, toss the steak bites with the remaining 1 tbsp olive oil, minced garlic, rosemary, thyme, salt, and black pepper.
  5. Combine Steak Bites and Potatoes:
    • After the potatoes have cooked for 15 minutes, add the seasoned steak bites to the air fryer basket with the potatoes.
    • Cook for an additional 7-10 minutes, shaking the basket halfway through, until the steak is cooked to your desired doneness and the potatoes are crispy and golden brown.
  6. Garlic Butter:
    • In a small bowl, mix the melted butter with the remaining minced garlic.
  7. Toss and Serve:
    • Once the steak bites and potatoes are done, transfer them to a large serving bowl.
    • Drizzle the garlic butter over the steak bites and potatoes, tossing gently to coat evenly.
    • Garnish with fresh parsley.
