Air Fryer Garlic Butter Steak Bites and Potatoes

Ingredients
- 1.5 lbs sirloin steak, cut into bite-sized pieces
- 1 lb baby potatoes, halved or quartered if large
- 3 tbsp olive oil
- 4 tbsp unsalted butter, melted
- 4 garlic cloves, minced
- 1 tbsp fresh rosemary, finely chopped (or 1 tsp dried rosemary)
- 1 tbsp fresh thyme, finely chopped (or 1 tsp dried thyme)
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Prepare the Potatoes:
- In a large bowl, toss the baby potatoes with 2 tbsp olive oil, 1 minced garlic clove, half the rosemary, half the thyme, paprika, salt, and black pepper until evenly coated.
- Preheat the Air Fryer:
- Preheat your air fryer to 400°F (200°C) for about 3-5 minutes.
- Cook the Potatoes:
- Place the seasoned potatoes in the air fryer basket in a single layer.
- Air fry at 400°F (200°C) for 15 minutes, shaking the basket halfway through the cooking time to ensure even cooking.
- Prepare the Steak Bites:
- In another large bowl, toss the steak bites with the remaining 1 tbsp olive oil, minced garlic, rosemary, thyme, salt, and black pepper.
- Combine Steak Bites and Potatoes:
- After the potatoes have cooked for 15 minutes, add the seasoned steak bites to the air fryer basket with the potatoes.
- Cook for an additional 7-10 minutes, shaking the basket halfway through, until the steak is cooked to your desired doneness and the potatoes are crispy and golden brown.
- Garlic Butter:
- In a small bowl, mix the melted butter with the remaining minced garlic.
- Toss and Serve:
- Once the steak bites and potatoes are done, transfer them to a large serving bowl.
- Drizzle the garlic butter over the steak bites and potatoes, tossing gently to coat evenly.
- Garnish with fresh parsley.
