Ingredients:

  • 4 large bell peppers, halved and seeds removed
  • 1 pound (450g) ground beef or turkey
  • 1 cup cooked quinoa or rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • Fresh cilantro or parsley for garnish (optional)
  • Sour cream or salsa for serving (optional)

Instructions:

  1. Preheat Air Fryer:
    • Preheat your air fryer to 375°F (190°C).
  2. Prepare Bell Peppers:
    • Cut the bell peppers in half lengthwise, removing the seeds and membranes. Brush the outer and inner surfaces with olive oil.
  3. Cook Ground Meat:
    • In a skillet over medium heat, cook the ground beef or turkey until browned. Drain any excess fat.
  4. Prepare Filling:
    • In a large mixing bowl, combine the cooked ground meat, cooked quinoa or rice, black beans, corn, diced tomatoes, shredded cheese, ground cumin, chili powder, garlic powder, onion powder, salt, and black pepper. Mix well.
  5. Stuff Peppers:
    • Spoon the filling mixture into each halved bell pepper, pressing it down slightly to pack the filling.
  6. Air Fry:
    • Place the stuffed peppers in the air fryer basket, arranging them so they are stable and won’t tip over. Air fry for 15-20 minutes or until the peppers are tender and the filling is heated through.
  7. Optional Cheese Topping:
    • If desired, sprinkle additional cheese on top of each stuffed pepper during the last 5 minutes of cooking until melted and bubbly.
  8. Garnish and Serve:
    • Remove the stuffed peppers from the air fryer. Garnish with fresh cilantro or parsley if desired. Serve hot with optional toppings like sour cream or salsa.
