Apple Fritter Discard

Ingredients:

For the fritters:

  • 1 cup sourdough discard
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups diced apples (peeled and cored)
  • Vegetable oil, for frying

For the glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • Pinch of cinnamon (optional)

Instructions:

  1. Prepare the Batter:
    • In a large mixing bowl, combine the sourdough discard, flour, sugar, baking powder, and salt. Mix well.
    • In a separate bowl, whisk together the eggs, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.
    • Gently fold in the diced apples until evenly distributed throughout the batter.
  2. Fry the Fritters:
    • In a deep skillet or Dutch oven, heat about 2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C).
    • Using a spoon or cookie scoop, carefully drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan. Flatten slightly with the back of the spoon.
    • Fry the fritters for 2-3 minutes on each side, or until golden brown and cooked through. Use a slotted spoon to transfer the cooked fritters to a paper towel-lined plate to drain excess oil.
  3. Make the Glaze:
    • In a small bowl, whisk together the powdered sugar, milk, vanilla extract, and cinnamon (if using) until smooth. Adjust the consistency by adding more milk if too thick, or more powdered sugar if too thin.
  4. Glaze the Fritters:
    • While the fritters are still warm, dip each one into the glaze, coating both sides evenly. Place the glazed fritters on a wire rack set over a baking sheet to catch any drips.
  5. Serve and Enjoy:
