Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 slices mozzarella cheese
- 4 slices ripe tomato
- 1/4 cup fresh basil leaves
- Balsamic glaze (store-bought or homemade)
Instructions:
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil or cooking spray.
- Season both sides of the chicken breasts with salt and pepper according to your taste preferences.
- Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken breasts and cook for about 3-4 minutes per side, or until they are golden brown.
- Transfer the partially cooked chicken breasts to the prepared baking dish.
- Top each chicken breast with a slice of mozzarella cheese, followed by a slice of tomato, and a few fresh basil leaves.
