Blackstone pineapple chicken

Ingredients

  • 1 1/2 lbs (680g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, diced
  • 2 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons vegetable oil
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)
  • Cooked white or brown rice (for serving)

Instructions

  1. Prepare the Sauce:
    • In a small bowl, mix together the soy sauce, hoisin sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Set aside.
  2. Heat the Griddle:
    • Preheat your Blackstone griddle to medium-high heat.
  3. Cook the Chicken:
    • Add 1 tablespoon of vegetable oil to the griddle.
    • Add the chicken pieces and cook for 5-7 minutes, turning occasionally, until the chicken is cooked through and has a nice sear. Remove the chicken from the griddle and set aside.
  4. Cook the Vegetables:
    • Add the remaining tablespoon of vegetable oil to the griddle.
    • Add the diced red bell pepper, green bell pepper, and red onion. Cook for 3-4 minutes until they start to soften.
  5. Add Pineapple and Sauce:
    • Add the pineapple chunks to the griddle with the vegetables and cook for another 2 minutes.
    • Return the chicken to the griddle and pour the sauce over the chicken and vegetables. Stir to combine and cook for another 3-4 minutes, allowing the sauce to thicken and coat the chicken and vegetables.
  6. Serve:
    • Remove the pineapple chicken from the griddle.
    • Serve over cooked white or brown rice.
    • Garnish with sliced green onions and sesame seeds.
