Breakfast tacos

Ingredients:

  • 8 small flour or corn tortillas
  • 6 large eggs
  • 1/4 cup milk
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
  • 1/2 pound breakfast sausage or bacon, cooked and crumbled
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • Fresh cilantro, chopped (optional)
  • Salsa (optional)
  • Salt and pepper, to taste
  • 2 tablespoons butter or oil

Instructions:

  1. Prepare the Ingredients:
    • Dice the bell peppers, onions, and tomatoes.
    • Cook the breakfast sausage or bacon until crispy, then crumble it.
  2. Preheat the Blackstone Griddle:
    • Preheat your Blackstone griddle to medium-high heat. Allow it to get hot before adding any ingredients.
  3. Cook the Vegetables:
    • Add a tablespoon of butter or oil to the griddle. Once melted, add the diced bell peppers and onions.
    • Cook for 3-4 minutes until they are softened and slightly caramelized.
  4. Scramble the Eggs:
    • In a bowl, whisk together the eggs, milk, salt, and pepper.
    • Push the cooked vegetables to one side of the griddle and add another tablespoon of butter or oil to the other side.
    • Pour the egg mixture onto the griddle and cook, stirring frequently, until the eggs are scrambled and fully cooked.
  5. Warm the Tortillas:
    • While the eggs are cooking, place the tortillas on the griddle to warm them up. Heat each side for about 30 seconds to 1 minute until they are warm and pliable.
  6. Assemble the Tacos:
    • On each tortilla, layer some scrambled eggs, cooked vegetables, crumbled sausage or bacon, and shredded cheese.
    • Add diced tomatoes, avocado slices, and a sprinkle of fresh cilantro if desired.
  7. Serve:
    • Serve the breakfast tacos immediately with salsa on the side if you like.
