Broccoli & Cheddar Twice Baked Potatoes

Serves: 4

Ingredients:

For the Twice Baked Potatoes:

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup unsalted butter, softened
  • 1/4 cup milk
  • 2 green onions, finely chopped

For the Broccoli Filling:

  • 2 cups broccoli florets, steamed and chopped
  • 1/2 cup shredded cheddar cheese
  • Salt and black pepper to taste

Instructions:

 Bake the Potatoes:

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the potatoes and pierce them several times with a fork.
  3. Rub each potato with olive oil and sprinkle with salt and pepper.
  4. Place the potatoes directly on the oven rack and bake for about 1 hour or until they are tender.

Prepare the Broccoli Filling:

  1. Steam the broccoli florets until tender, then chop them into small pieces.
  2. In a bowl, mix the chopped broccoli with shredded cheddar cheese. Season with salt and black pepper to taste.

 Scoop Out the Potatoes:

  1. Allow the baked potatoes to cool for a few minutes.
  2. Cut each potato in half lengthwise and scoop out the flesh, leaving a thin shell.

 Make the Potato Mash:

  1. Mash the scooped-out potato flesh in a bowl.
  2. Add shredded cheddar cheese, sour cream, softened butter, milk, and chopped green onions.
  3. Mix until well combined and creamy.

 Assemble the Twice Baked Potatoes:

  1. Fold the broccoli and cheddar mixture into the mashed potatoes.
  2. Spoon the mixture back into the potato shells.

Bake Again:

  1. Place the filled potato halves on a baking sheet.
  2. Bake in the preheated oven for an additional 15-20 minutes or until the tops are golden brown.

Serve:

  1. Remove from the oven and let them cool slightly.
  2. Serve your Broccoli & Cheddar Twice Baked Potatoes while they are still warm.

Note: Customize the recipe by adding bacon bits or additional herbs to the filling.
