CRAB AND SHRIMP SEAFOOD BISQUE
Crab and Shrimp Seafood Bisque Recipe
Ingredients:
- 1/2 pound crabmeat, picked through for shells
- 1/2 pound shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 1/2 cup onion, finely chopped
- 1/4 cup celery, finely chopped
- 1/4 cup carrot, finely chopped
- 4 cloves garlic, minced
- 4 cups seafood or chicken broth
- 1 cup heavy cream
- 1/4 teaspoon paprika
- 1/4 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare Seafood:
- In a skillet, melt 2 tablespoons of butter over medium heat. Add the shrimp and cook for 2-3 minutes until pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of butter and sauté the crabmeat for 2-3 minutes. Remove the crabmeat and set aside.
- Prepare the Base:
- In a large pot, melt the butter over medium heat. Add the onion, celery, carrot, and garlic. Sauté for about 5-6 minutes until the vegetables are softened.
- Create the Bisque:
- Sprinkle the flour over the vegetables and cook, stirring constantly, for 2-3 minutes to create a roux.
- Gradually pour in the seafood or chicken broth, stirring continuously to avoid lumps.
- Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 10-15 minutes, stirring occasionally.
- Blend and Season:
- Use an immersion blender or transfer the mixture in batches to a blender to puree until smooth.
- Return the pureed mixture to the pot. Stir in the heavy cream, paprika, and dried thyme.
- Season with salt and pepper to taste.
- Add Seafood:
- Gently add the cooked shrimp and crabmeat into the bisque. Simmer for an additional 5-7 minutes to allow the flavors to meld.
- Serve:
- Ladle the seafood bisque into bowls. Garnish with chopped fresh parsley before serving.
