CRAB AND SHRIMP SEAFOOD BISQUE

Crab and Shrimp Seafood Bisque Recipe

Ingredients:

  • 1/2 pound crabmeat, picked through for shells
  • 1/2 pound shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 1/2 cup onion, finely chopped
  • 1/4 cup celery, finely chopped
  • 1/4 cup carrot, finely chopped
  • 4 cloves garlic, minced
  • 4 cups seafood or chicken broth
  • 1 cup heavy cream
  • 1/4 teaspoon paprika
  • 1/4 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare Seafood:
    • In a skillet, melt 2 tablespoons of butter over medium heat. Add the shrimp and cook for 2-3 minutes until pink and opaque. Remove the shrimp from the skillet and set aside.
    • In the same skillet, add the remaining 2 tablespoons of butter and sauté the crabmeat for 2-3 minutes. Remove the crabmeat and set aside.
  2. Prepare the Base:
    • In a large pot, melt the butter over medium heat. Add the onion, celery, carrot, and garlic. Sauté for about 5-6 minutes until the vegetables are softened.
  3. Create the Bisque:
    • Sprinkle the flour over the vegetables and cook, stirring constantly, for 2-3 minutes to create a roux.
    • Gradually pour in the seafood or chicken broth, stirring continuously to avoid lumps.
    • Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 10-15 minutes, stirring occasionally.
  4. Blend and Season:
    • Use an immersion blender or transfer the mixture in batches to a blender to puree until smooth.
    • Return the pureed mixture to the pot. Stir in the heavy cream, paprika, and dried thyme.
    • Season with salt and pepper to taste.
  5. Add Seafood:
    • Gently add the cooked shrimp and crabmeat into the bisque. Simmer for an additional 5-7 minutes to allow the flavors to meld.
  6. Serve:
    • Ladle the seafood bisque into bowls. Garnish with chopped fresh parsley before serving.
