  • 1 package puff pastry sheets (2 sheets), thawed
  • 1 tablespoon olive oil

  • 5 ounces fresh spinach, chopped (or 1 package frozen spinach, thawed and drained)
  • 1/2 cup ricotta cheese
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, beaten
  • Salt and pepper to taste
  • 1 teaspoon dried dill (optional)
  • 1 teaspoon dried oregano (optional)
  • 1 egg (for egg wash)
  • Sesame seeds or poppy seeds (optional, for topping)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare Spinach Filling:
    • Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
    • Add the chopped fresh spinach to the skillet and cook until wilted, about 2-3 minutes. If using frozen spinach, make sure it is thawed and well-drained before adding to the skillet. Season with salt, pepper, and optional dried dill and oregano.
  3. Combine Cheeses:
    • In a mixing bowl, combine the ricotta cheese, crumbled feta cheese, grated Parmesan cheese, and beaten egg. Mix well.
    • Add the cooked spinach mixture to the cheese mixture and stir until thoroughly combined. Adjust seasoning with salt and pepper to taste.
  4. Prepare Puff Pastry:
    • On a lightly floured surface, roll out the puff pastry sheets to smooth any creases. Cut each sheet into squares or rectangles, depending on your desired pastry size.
  5. Fill and Fold Pastries:
    • Place a spoonful of the spinach and cheese filling in the center of each pastry square. Fold the pastry over the filling to form triangles or rectangles. Press the edges together with a fork to seal.
  6. Egg Wash:
    • In a small bowl, beat the egg for the egg wash. Brush the top of each pastry with the beaten egg. Sprinkle with sesame seeds or poppy seeds if desired.
  7. Bake:
    • Place the filled pastries on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, or until the pastries are golden brown and puffed.
  8. Cool and Serve:
    • Remove the pastries from the oven and let them cool slightly on a wire rack before serving. Serve warm or at room temperature.
