Preparation Time: 15 minutes
Baking Time: 20-25 minutes
Total Time: 35-40 minutes
Intensity: Easy
Ingredients:
- 1 package puff pastry sheets (2 sheets), thawed
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 5 ounces fresh spinach, chopped (or 1 package frozen spinach, thawed and drained)
- 1/2 cup ricotta cheese
- 1/2 cup feta cheese, crumbled
- 1/4 cup grated Parmesan cheese
- 1 large egg, beaten
- Salt and pepper to taste
- 1 teaspoon dried dill (optional)
- 1 teaspoon dried oregano (optional)
- 1 egg (for egg wash)
- Sesame seeds or poppy seeds (optional, for topping)
Instructions:
- Preheat Oven:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare Spinach Filling:
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add the chopped fresh spinach to the skillet and cook until wilted, about 2-3 minutes. If using frozen spinach, make sure it is thawed and well-drained before adding to the skillet. Season with salt, pepper, and optional dried dill and oregano.
- Combine Cheeses:
- In a mixing bowl, combine the ricotta cheese, crumbled feta cheese, grated Parmesan cheese, and beaten egg. Mix well.
- Add the cooked spinach mixture to the cheese mixture and stir until thoroughly combined. Adjust seasoning with salt and pepper to taste.
- Prepare Puff Pastry:
- On a lightly floured surface, roll out the puff pastry sheets to smooth any creases. Cut each sheet into squares or rectangles, depending on your desired pastry size.
- Fill and Fold Pastries:
- Place a spoonful of the spinach and cheese filling in the center of each pastry square. Fold the pastry over the filling to form triangles or rectangles. Press the edges together with a fork to seal.
- Egg Wash:
- In a small bowl, beat the egg for the egg wash. Brush the top of each pastry with the beaten egg. Sprinkle with sesame seeds or poppy seeds if desired.
- Bake:
- Place the filled pastries on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, or until the pastries are golden brown and puffed.
- Cool and Serve:
- Remove the pastries from the oven and let them cool slightly on a wire rack before serving. Serve warm or at room temperature.
