Gluten-Free Chocolate Chip Cookies Recipe

Ingredients:

  • 1 1/4 cups gluten-free all-purpose flour blend (with xanthan gum, or add 1/4 teaspoon if your blend doesn’t include it)
  • 1/2 teaspoon baking soda (ensure it’s gluten-free)
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup gluten-free chocolate chips (semi-sweet or dark chocolate)

Instructions:

Step 1: Prepare the Dry Ingredients

  1. In a medium bowl, whisk together the gluten-free flour blend, baking soda, and salt until well combined. Set aside.

Step 2: Cream the Butter and Sugars

  1. In a large bowl, using a hand mixer or stand mixer, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).

Step 3: Add the Egg and Vanilla

  1. Beat in the egg and vanilla extract until fully combined.

Step 4: Combine Wet and Dry Ingredients

  1. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  2. Stir in the gluten-free chocolate chips until evenly distributed.

Step 5: Chill the Dough (Optional)

  1. For thicker cookies, cover the dough and chill in the refrigerator for at least 30 minutes (up to 2 hours). This step is optional but recommended for better texture.

Step 6: Bake the Cookies

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. Scoop out tablespoon-sized portions of dough and place them onto the prepared baking sheet, spacing them about 2 inches apart.
  3. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set but still soft. The cookies will continue to firm up as they cool.

Step 7: Cool and Serve

  1. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
