Gluten-Free Fluffy Pancakes Recipe

Ingredients:

  • 2 tablespoons sugar
  • 1 tablespoon baking powder (ensure it’s gluten-free)
  • 1/4 teaspoon salt
  • 1 cup milk (dairy or non-dairy alternative like almond or oat milk)
  • 1 large egg
  • 2 tablespoons unsalted butter, melted (or coconut oil for dairy-free)
  • 1 teaspoon vanilla extract
  • Cooking spray or additional butter for the pan

Instructions:

Step 1: Mix Dry Ingredients

  1. In a medium bowl, whisk together the gluten-free flour blend, sugar, baking powder, and salt until well combined.

Step 2: Mix Wet Ingredients

  1. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.

Step 3: Combine Wet and Dry Ingredients

  1. Slowly pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are fine. The batter should be thick but pourable. If it’s too thick, add a little more milk (1 tablespoon at a time) until you reach the desired consistency.

Step 4: Cook the Pancakes

  1. Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or butter.
  2. Scoop about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  3. Flip the pancakes and cook for another 1-2 minutes on the other side, until golden brown and cooked through.
