Ingredients
- 1 lb (450g) ground beef
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 green bell pepper, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (optional)
- 2 tablespoons fresh parsley, chopped
Instructions
- Prepare the Ingredients:
- Dice the red, yellow, and green bell peppers and onion.
- Mince the garlic.
- Cook the Ground Beef:
- In a large skillet, heat the olive oil over medium-high heat.
- Add the ground beef to the skillet and cook, breaking it up with a spatula, until it is browned and cooked through, about 5-7 minutes.
- Drain any excess fat from the skillet.
- Add the Vegetables:
- Add the diced bell peppers and onion to the skillet with the ground beef.
- Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.
- Add the Garlic and Spices:
- Add the minced garlic to the skillet and cook for 1 minute, until fragrant.
- Stir in the smoked paprika, ground cumin, chili powder, salt, and pepper.
- Add the Tomatoes:
- Pour in the undrained can of diced tomatoes and stir to combine.
- Bring the mixture to a simmer and cook for 5 minutes, allowing the flavors to meld together.
- Finish and Serve:
- If using, sprinkle the shredded cheddar cheese over the top of the skillet and cover for 2-3 minutes, until the cheese is melted.
- Remove from heat and sprinkle with chopped fresh parsley.
- Serve immediately.
