Instructions:

  1. Preheat Oven:

  4. Add Eggs and Vanilla:

  5. Incorporate Bananas and Sour Cream:
    • Mix in the mashed bananas and sour cream (or Greek yogurt) until well combined.
  6. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
  7. Add Pineapple, Coconut, and Nuts:
    • Fold in the crushed pineapple, shredded coconut, and chopped macadamia nuts (if using) until evenly distributed throughout the batter.
  8. Bake:
    • Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean or with just a few crumbs.
  9. Cool:
    • Remove the bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
  10. Serve:
    • Once cooled, slice the Hawaiian banana bread and serve. It can be enjoyed plain or with a spread of butter.
