Hawaiian Banana Bread
Preparation Time: 15 minutes
Baking Time: 60-70 minutes
Total Time: 1 hour 25 minutes
Intensity: Easy
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup sour cream or Greek yogurt
- 3 ripe bananas, mashed
- 1/2 cup crushed pineapple, drained
- 1/2 cup sweetened shredded coconut
- 1/2 cup chopped macadamia nuts (optional)
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- Mix Dry Ingredients:
- In a medium bowl, whisk together the flour, baking soda, salt, ground cinnamon, and ground nutmeg. Set aside.
- Cream Butter and Sugar:
- In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
- Add Eggs and Vanilla:
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Incorporate Bananas and Sour Cream:
- Mix in the mashed bananas and sour cream (or Greek yogurt) until well combined.
- Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
- Add Pineapple, Coconut, and Nuts:
- Fold in the crushed pineapple, shredded coconut, and chopped macadamia nuts (if using) until evenly distributed throughout the batter.
- Bake:
- Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean or with just a few crumbs.
- Cool:
- Remove the bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
- Serve:
- Once cooled, slice the Hawaiian banana bread and serve. It can be enjoyed plain or with a spread of butter.
Note: This Hawaiian banana bread is a tropical twist on the classic recipe, incorporating flavors of pineapple, coconut, and optional macadamia nuts for added texture and taste. Perfect for breakfast, dessert, or a snack, this bread brings a taste of the islands to your table. Enjoy!
