This is a beginner-friendly, no-bake dessert. It involves a few simple steps—heating cream, blooming gelatin, and chilling. No oven, no fuss, just a silky-smooth finish.

 Ingredients (Makes 4 servings)

 For the Panna Cotta:

  • 2 cups heavy cream

  • ½ cup whole milk

  • ½ cup granulated sugar

  • 1 tablespoon pure vanilla extract or 1 vanilla bean, split and scraped

  • 2 teaspoons powdered unflavored gelatin

  • 3 tablespoons cold water

 For the Topping:

  • 1 cup mixed fresh berries (strawberries, raspberries, blueberries, blackberries)

  • 1 tablespoon sugar (optional)

  • Fresh mint (optional, for garnish)

 Equipment Needed

  • Small saucepan

  • Mixing bowl

  • Whisk or spoon

  • Ramekins or small dessert cups

  • Fine mesh strainer (optional, for extra smooth texture)

 Step-by-Step Instructions

 Step 1: Bloom the Gelatin

  1. In a small bowl, sprinkle gelatin over cold water and let it sit for 5–10 minutes.

    This allows the gelatin to “bloom” and ensures it dissolves evenly later.

 Step 2: Heat the Cream

  1. In a medium saucepan, combine the heavy cream, milk, and sugar.

  2. Add the vanilla extract or scraped vanilla bean seeds and pod.

  3. Heat over medium-low, stirring occasionally, until the sugar is fully dissolved and the mixture is hot but not boiling (about 170°F / 75°C).

 Step 3: Dissolve the Gelatin

  1. Remove the pan from the heat.

  2. Add the bloomed gelatin and stir until fully dissolved.

  3. Remove the vanilla bean pod if used.

Optional: For extra smooth panna cotta, strain the mixture through a fine mesh sieve into a pitcher or bowl.

 Step 4: Pour and Chill

  1. Pour the mixture into ramekins or dessert cups (about ½ cup each).

  2. Let cool to room temperature.

  3. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight, until set.

 Step 5: Prepare the Berry Topping

  1. Toss fresh berries with a little sugar if desired and let sit for 10 minutes to macerate.

  2. Spoon on top of chilled panna cotta just before serving.

  3. Garnish with fresh mint.

 Serving Options

  • Serve in glass jars or cups for an elegant look.

  • To unmold: dip ramekins in warm water for 5–10 seconds, then invert onto a plate.

  • Add a berry coulis, lemon zest, or caramel drizzle for extra flavor.

 Storage

  • Store panna cotta (covered) in the refrigerator for up to 4 days.

  • Top with berries only when ready to serve to keep it fresh.
