Ingredients:

For the Pie Crust:

  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, cold and cubed
  • 1/2 teaspoon salt
  • 1/4 cup ice water (adjust as needed)

For the Sausage Filling:

  • 1 pound (450g) ground sausage (pork or a mix of pork and beef)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • Salt and black pepper to taste
  • 1/4 cup all-purpose flour
  • 1 cup whole milk
  • 1 cup chicken or vegetable broth

For the Egg Wash:

  • 1 egg, beaten

Instructions:

Prepare the Pie Crust:

  1. In a food processor, pulse together flour and salt. Add cold, cubed butter and pulse until the mixture resembles coarse crumbs.
  2. With the food processor running, gradually add ice water until the dough comes together. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C).

Prepare the Sausage Filling:

  1. In a skillet over medium heat, cook the ground sausage, breaking it apart with a spoon, until browned. Drain excess fat if needed.
  2. Add chopped onion and minced garlic to the skillet. Sauté until the onion is translucent.
  3. Stir in dried thyme, dried sage, salt, and black pepper.
  4. Sprinkle flour over the sausage mixture and stir to combine. Cook for 1-2 minutes.
  5. Gradually pour in milk and broth, stirring continuously to avoid lumps. Cook until the mixture thickens into a creamy consistency. Remove from heat and let it cool slightly.

Assemble the Pie:

  1. Roll out the chilled pie crust on a floured surface to fit a pie dish. Place the crust in the dish, trimming any excess.
  2. Pour the sausage filling into the pie crust.
  3. Roll out a second piece of pie crust to cover the filling. Place it over the top and crimp the edges to seal.
  4. Cut slits in the top crust to allow steam to escape.

Bake:

  1. Brush the top crust with the beaten egg for a golden finish.
  2. Bake in the preheated oven for 40-45 minutes or until the crust is golden brown and the filling is bubbly.
  3. Allow the sausage pie to cool for a few minutes before slicing and serving.
