Total Time: 45–50 minutes
Difficulty: Easy
Servings: 4
Ingredients
For the Chicken:
-
4 boneless, skinless chicken breasts (or thighs)
-
1 tbsp olive oil or butter
-
Salt and black pepper, to taste
-
1/2 tsp paprika (optional)
-
1/2 tsp garlic powder
For the Honey Bacon Glaze:
-
6 slices thick-cut bacon, diced
-
1/3 cup honey
-
2 tbsp Dijon mustard (or yellow mustard)
-
1 tbsp soy sauce (or coconut aminos)
-
2 tsp apple cider vinegar
-
1 clove garlic, minced
-
Optional: pinch of red pepper flakes or cayenne for heat
Instructions
Step 1: Cook the Bacon
-
In a large skillet over medium heat, cook diced bacon until crispy.
-
Use a slotted spoon to transfer bacon to a paper towel–lined plate.
-
Drain all but 1 tbsp of bacon fat from the pan — leave it in for flavor!
Step 2: Cook the Chicken
-
Season chicken breasts with salt, pepper, garlic powder, and paprika.
-
In the same skillet, add olive oil (or a dab of butter if needed) and sear the chicken over medium heat.
-
Cook for about 5–6 minutes per side, or until golden brown and cooked through (internal temp: 165°F / 74°C).
-
Remove chicken and set aside on a plate; keep warm.
Step 3: Make the Glaze
-
In a small bowl, whisk together honey, Dijon mustard, soy sauce, apple cider vinegar, and garlic.
-
Pour mixture into the same skillet (with remaining bacon fat) and simmer over medium heat for 2–3 minutes, stirring frequently, until slightly thickened.
Tip: Stir in a pinch of chili flakes or cayenne for a kick!
Step 4: Glaze the Chicken
-
Return the chicken to the skillet, spoon glaze over the top, and cook for another 2–3 minutes until everything is coated and sticky.
-
Sprinkle the crispy bacon over the chicken just before serving.
-
Garnish with fresh parsley or thyme if desired.
