Honey Peach Cream Cheese Cupcakes

Ingredients

Cupcakes

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup peeled and finely chopped peaches

Cream Cheese Filling

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg

Honey Peach Frosting

  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 3-4 cups powdered sugar
  • 1/2 cup finely chopped peaches (for garnish)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. Make the Cupcake Batter:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
    • In a large bowl, beat the butter, sugar, and honey together until light and fluffy.
    • Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
    • Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
    • Gently fold in the chopped peaches.
  3. Make the Cream Cheese Filling:
    • In a separate bowl, beat the cream cheese, sugar, vanilla extract, and egg together until smooth.
  4. Assemble the Cupcakes:
    • Spoon about 1 tablespoon of cupcake batter into the bottom of each cupcake liner.
    • Add about 1 teaspoon of the cream cheese filling on top of the batter.
    • Spoon the remaining cupcake batter over the cream cheese filling, filling each liner about 3/4 full.
  5. Bake the Cupcakes:
    • Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  6. Make the Honey Peach Frosting:
    • In a large bowl, beat the butter and cream cheese together until smooth and creamy.
    • Add the honey and vanilla extract, and beat until combined.
    • Gradually add the powdered sugar, one cup at a time, until the frosting reaches your desired consistency.
  7. Frost the Cupcakes:
    • Once the cupcakes are completely cool, frost them with the honey peach frosting.
    • Garnish with the finely chopped peaches.
