Ingredients:

  • 3 large potatoes, peeled and grated
  • 1 small onion, finely chopped
  • 1/2 cup shredded cheddar cheese

  • 1 large egg, beaten
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste
  • Cooking spray or olive oil, for greasing

  • Chopped green onions
  • Crispy bacon bits
  • Salsa

Instructions:

  1. Preheat Air Fryer:
    • Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  2. Prepare Potatoes:
    • Peel and grate the potatoes. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.
  3. Combine Ingredients:
    • In a large mixing bowl, combine the grated potatoes, finely chopped onion, shredded cheddar cheese, Parmesan cheese, all-purpose flour, beaten egg, chopped parsley, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are evenly combined.
  4. Form Fritters:
    • Take a portion of the mixture and shape it into a flat, round fritter. Repeat until all the mixture is used.
  5. Grease Air Fryer Basket:
    • Lightly grease the air fryer basket with cooking spray or olive oil.
  6. Air Fry Fritters:
    • Place the potato fritters in the air fryer basket, leaving some space between them. Cook at 375°F (190°C) for 12-15 minutes, flipping halfway through, or until the fritters are golden brown and crispy.
  7. Check for Doneness:
    • Ensure the fritters are cooked through and have a crispy exterior.
  8. Serve:
    • Remove the loaded potato fritters from the air fryer. Serve them hot with your favorite toppings, such as sour cream, chopped green onions, crispy bacon bits, and salsa.
