Ingredients:

  • 1 loaf of almond flour bread, cubed (about 8 cups)

  • 1/4 cup chopped fresh parsley
  • 1 tablespoon chopped fresh sage
  • 1 tablespoon chopped fresh thyme
  • 1 teaspoon salt

  • 2 cups chicken or vegetable broth
  • 2 large eggs, beaten
  • Optional: chopped pecans or almonds for topping

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. Spread the cubed almond flour bread on a baking sheet and toast in the preheated oven for about 10-12 minutes, or until lightly golden and slightly crisp. Remove from the oven and set aside.
  3. In a large skillet, melt the unsalted butter over medium heat. Add the diced onion, celery, and mushrooms. Sauté until the vegetables are softened, about 5-6 minutes.
  4. Add the minced garlic, chopped parsley, sage, thyme, salt, and black pepper to the skillet. Cook for an additional 2-3 minutes, stirring frequently, until the garlic is fragrant and the herbs are aromatic. Remove from heat.
