mamas almond bread dressing

Ingredients:
- 1 loaf of almond flour bread, cubed (about 8 cups)
- 1/2 cup unsalted butter, melted
- 1 cup diced onion
- 1 cup diced celery
- 1 cup diced mushrooms
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 tablespoon chopped fresh sage
- 1 tablespoon chopped fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups chicken or vegetable broth
- 2 large eggs, beaten
- Optional: chopped pecans or almonds for topping
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.
- Spread the cubed almond flour bread on a baking sheet and toast in the preheated oven for about 10-12 minutes, or until lightly golden and slightly crisp. Remove from the oven and set aside.
- In a large skillet, melt the unsalted butter over medium heat. Add the diced onion, celery, and mushrooms. Sauté until the vegetables are softened, about 5-6 minutes.
- Add the minced garlic, chopped parsley, sage, thyme, salt, and black pepper to the skillet. Cook for an additional 2-3 minutes, stirring frequently, until the garlic is fragrant and the herbs are aromatic. Remove from heat.
- In a mixing bowl, combine the toasted almond bread cubes with the sautéed vegetable and herb mixture. Toss gently to mix everything together evenly.
- In a separate bowl, whisk together the chicken or vegetable broth and beaten eggs until well combined.
- Pour the broth and egg mixture over the almond bread and vegetables in the mixing bowl. Stir gently to coat all the bread cubes with the liquid mixture.
- Transfer the dressed almond bread mixture to the prepared baking dish, spreading it out evenly.
- If desired, sprinkle chopped pecans or almonds on top of the dressing for added crunch and flavor.
- Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10 minutes or until the top is golden brown and the dressing is cooked through.
