Ingredients

  • 1 1/2 lbs ground beef (85% lean)
  • 3/4 cup breadcrumbs
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/4 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp smoked paprika (optional)

Topping

  • 1/4 cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp mustard

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
  2. Prepare the Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, milk, chopped onion, minced garlic, egg, ketchup, Worcestershire sauce, salt, pepper, thyme, and smoked paprika. Mix until just combined.
  3. Shape the Meatloaf: Transfer the mixture into the prepared loaf pan and press it down evenly.
  4. Prepare the Topping: In a small bowl, mix ketchup, brown sugar, and mustard. Spread the mixture evenly over the top of the meatloaf.
  5. Bake the Meatloaf: Place the pan in the preheated oven and bake for about 50-60 minutes or until the internal temperature reaches 160°F (71°C).
  6. Rest and Serve: Let the meatloaf rest for 10 minutes before slicing. Serve warm with mashed potatoes and vegetables.
