Prime rib

Ingredients

  • 1 prime rib roast (about 4-6 pounds)
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon kosher salt
  • 1 tablespoon black pepper
  • 1 cup beef broth (optional, for gravy)

Instructions

  1. Preparation:
    • Remove the prime rib from the refrigerator and let it sit at room temperature for at least 1 hour before cooking.
  2. Preheat the Oven:
    • Preheat your oven to 450°F (230°C).
  3. Season the Prime Rib:
    • In a small bowl, combine the minced garlic, olive oil, rosemary, thyme, salt, and pepper.
    • Rub the mixture all over the prime rib roast, making sure to cover all sides.
  4. Roasting:
    • Place the prime rib, fat side up, on a roasting pan fitted with a rack.
    • Roast in the preheated oven for 15 minutes to sear the outside.
    • Reduce the oven temperature to 325°F (165°C) and continue roasting until the desired doneness is reached:
      • For medium-rare: roast until the internal temperature reaches 130°F (54°C), about 1.5 hours.
      • For medium: roast until the internal temperature reaches 140°F (60°C), about 2 hours.
    • Use a meat thermometer to check the internal temperature.
  5. Resting:
    • Remove the roast from the oven and transfer it to a cutting board.
    • Tent it loosely with aluminum foil and let it rest for 20-30 minutes. This allows the juices to redistribute throughout the meat.
  6. Making Gravy (Optional):
    • While the roast is resting, you can make a simple gravy using the pan drippings.
    • Place the roasting pan on the stovetop over medium heat.
    • Add 1 cup of beef broth to the pan and stir, scraping up any browned bits from the bottom.
    • Bring to a simmer and cook until the gravy has thickened slightly, about 5 minutes.
    • Strain the gravy through a fine-mesh sieve and serve with the prime rib.
  7. Serving:
    • Carve the prime rib into slices and serve with the gravy on the side.
