Total Time: 3 hours 35 minutes

Servings: 6 jars

Difficulty: Easy

Ingredients

For the Graham Cracker Crust

  • 1½ cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar

For the Cheesecake Filling

  • 16 ounces (450g) cream cheese, softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • 1 cup heavy whipping cream, cold

For the Raspberry Sauce

  • 2 cups fresh or frozen raspberries
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 1 tablespoon water

Optional Garnish

  • Fresh raspberries
  • Whipped cream
  • Mint leaves
  • Graham cracker crumbs
  • White chocolate shavings

Instructions

Step 1: Prepare the Crust

In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until the crumbs resemble wet sand and hold together when pressed.

Divide the crumb mixture evenly among six serving jars. Press gently using the back of a spoon to create an even crust layer.

Place the jars in the refrigerator while preparing the filling.

Step 2: Make the Raspberry Sauce

In a saucepan over medium heat, combine raspberries, sugar, and lemon juice.

Cook for about 5–7 minutes until the berries soften and release their juices.

Mix the cornstarch with water to create a slurry. Stir it into the raspberry mixture and cook another 2–3 minutes until slightly thickened.

Remove from heat and allow the sauce to cool completely.

If you prefer a smooth sauce, strain it through a fine-mesh sieve to remove the seeds.

Step 3: Prepare the Cheesecake Filling

Beat the softened cream cheese until smooth and creamy.

Add sugar, vanilla extract, and lemon juice. Continue beating until completely combined.

In a separate bowl, whip the heavy cream until stiff peaks form.

Carefully fold the whipped cream into the cream cheese mixture using a spatula. Fold gently to maintain a light and fluffy texture.

Step 4: Assemble the Dessert

Remove the jars from the refrigerator.

Spoon or pipe a generous layer of cheesecake filling over each crust.

Add a layer of cooled raspberry sauce.

Repeat with another layer of cheesecake filling if desired.

Finish with more raspberry sauce on top.

Decorate each jar with fresh raspberries, whipped cream, mint leaves, or white chocolate shavings.

Step 5: Chill

Cover each jar with a lid or plastic wrap.

Refrigerate for at least 3 hours before serving. Overnight chilling produces the best flavor and texture.

Serve chilled.

Recipe Tips

  • Always use room-temperature cream cheese for a smooth filling.
  • Cold heavy cream whips faster and creates a lighter texture.
  • Avoid overmixing after folding in the whipped cream.
  • Let the raspberry sauce cool completely before layering.
  • Pipe the cheesecake filling using a piping bag for cleaner presentation.
  • Fresh raspberries provide the brightest flavor, but frozen work equally well.
  • Chill overnight for the richest cheesecake flavor.

Delicious Variations

  • Replace raspberries with strawberries, blueberries, or blackberries.
  • Add a layer of lemon curd for extra citrus flavor.
  • Use crushed vanilla cookies instead of graham crackers.
  • Mix white chocolate into the cheesecake filling.
  • Sprinkle toasted almonds or pecans between layers.
  • Add mini chocolate chips for extra texture.
  • Create a mixed berry version using several berries together.

Storage

Store covered jars in the refrigerator for up to 4 days.

Do not leave them at room temperature for more than 2 hours.

Freezing is possible for up to 1 month, although the texture may become slightly softer after thawing. Thaw overnight in the refrigerator before serving.
