Ingredients:

  • 4 medium-sized potatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions
  • 1/4 cup sour cream
  • Salt and pepper, to taste
  • Cooking spray or oil (for greasing)
  • Optional toppings: additional sour cream, chopped chives, salsa

Instructions:

  1. Preheat Air Fryer:
    • Preheat your air fryer to 375°F (190°C) for about 3 minutes.
  2. Prepare Potatoes:
    • Wash the potatoes thoroughly and pierce them several times with a fork. Place them in the microwave and cook on high for 8-10 minutes, or until they are tender. Alternatively, you can bake the potatoes in the oven until tender.
  3. Cool and Peel Potatoes:
    • Allow the potatoes to cool slightly, then peel off the skins. Mash the potatoes in a large mixing bowl until smooth.
  4. Add Fillings:
    • To the mashed potatoes, add shredded cheddar cheese, cooked and crumbled bacon, chopped green onions, sour cream, salt, and pepper. Mix until all ingredients are well combined.
  5. Form Potato Cakes:
    • Divide the mashed potato mixture into 8 equal portions. Shape each portion into a flat patty, about 1/2 inch thick.
  6. Assemble Stuffed Potato Cakes:
    • Take one potato patty and place a spoonful of additional filling (cheese, bacon, green onions) in the center. Top with another potato patty and press the edges together to seal, forming a stuffed potato cake. Repeat with the remaining potato mixture to make 4 stuffed potato cakes.
  7. Grease Air Fryer Basket:
    • Lightly grease the air fryer basket with cooking spray or oil.
  8. Air Fry Potato Cakes:
    • Place the stuffed potato cakes in the air fryer basket in a single layer, ensuring they are not touching. Air fry at 375°F (190°C) for 12-15 minutes, or until the potato cakes are golden brown and crispy on the outside.
  9. Serve:
    • Once done, remove the stuffed potato cakes from the air fryer. Serve hot with optional toppings such as sour cream, chopped chives, or salsa.
