The Ultimate Chicken Noodle Soup

Instructions:

  1. Prepare Chicken:
    • Cook the chicken breasts by boiling or baking until fully cooked. Shred the chicken using two forks and set aside.
  2. Sauté Vegetables:
    • In a large pot, heat olive oil over medium heat. Add chopped onions, minced garlic, sliced carrots, and sliced celery. Sauté until the vegetables are softened.
  3. Add Herbs and Seasonings:
    • Stir in dried thyme, dried rosemary, bay leaf, salt, and black pepper. Cook for an additional 2 minutes to allow the flavors to meld.
  4. Pour in Chicken Broth:
    • Add chicken broth to the pot. Bring the mixture to a boil and then reduce the heat to simmer. Let it simmer for 15-20 minutes to develop flavors.
  5. Cook Egg Noodles:
    • In a separate pot, cook the egg noodles according to the package instructions. Drain and set aside.
  6. Combine Chicken and Noodles:
    • Add the shredded chicken and cooked egg noodles to the pot. Simmer for an additional 5-7 minutes until the noodles are heated through.
  7. Check for Seasoning:
    • Taste the soup and adjust the seasoning if needed.
  8. Remove Bay Leaf:
    • Before serving, don’t forget to remove the bay leaf from the soup.
  9. Serve:
    • Ladle the ultimate chicken noodle soup into bowls. Garnish with chopped fresh parsley.
