Preparation Time: 30 minutes Cooking Time: 30 minutes Total Time: 1 hour Recipe Intensity: Moderate
Ingredients:
For the Dumplings:
- 1 cup all-purpose flour
- 1/2 cup water
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder (optional)
- 1/4 teaspoon onion powder (optional)
- Pinch of black pepper (optional)
- Cornstarch, for dusting
For the Soup:
- 6 cups vegetable broth
- 1 cup sliced carrots
- 1 cup chopped celery
- 1 cup diced onions
- 1 cup sliced mushrooms (such as button or cremini)
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Instructions:
- In a mixing bowl, combine the all-purpose flour, water, salt, garlic powder, onion powder, and black pepper (if using) to make the dumpling dough. Mix until a smooth dough forms. If the dough is too sticky, add a little more flour; if it’s too dry, add a little more water.
- Lightly dust a clean surface with cornstarch. Roll out the dumpling dough into a thin sheet, about 1/8 inch thick.
- Use a knife or cookie cutter to cut the dough into small squares or rounds to make the dumplings. Set aside.
- In a large pot, heat olive oil over medium heat. Add the diced onions and minced garlic, and sauté until translucent and fragrant.
- Add the sliced carrots, chopped celery, and sliced mushrooms to the pot. Cook for a few minutes until the vegetables start to soften.
- Pour in the vegetable broth and add the dried thyme and dried oregano. Season with salt and pepper to taste. Bring the soup to a simmer.
- Carefully drop the prepared dumplings into the simmering soup one by one, making sure they are evenly distributed.
- Cover the pot with a lid and let the soup simmer for about 15-20 minutes, or until the dumplings are cooked through and tender.
- Once the dumplings are cooked, taste the soup and adjust the seasoning if needed.
- Ladle the vegetarian dumpling soup into serving bowls. Garnish with chopped fresh parsley for a pop of color and flavor.
- Serve the warm and comforting vegetarian dumpling soup as a delicious and satisfying meal.
